In a large bowl combine the pork mince, carrot, herbs, salt, and pepper.

Using the mince mixture form into small bite size balls

Put these in the fridge for 10 minutes to firm up

Get rice cooker or pan on with the rice cooking

Remove from fridge and batch cook in fry pan until brown – avoid putting them all in if pan too small as they will just glug up the pan and you will not get a nice browning on the outside

Once the balls are nice and brown remove and set aside

In the same pan, add the tin tomatoes and cook for a 1 minute, then add the onion and garlic*. Bring this to the boil for 2 minutes.

Once boiling, return the balls to the tomato, onion and garlic and reduce the heat to a simmer. Simmer for 15 minutes

Serve balls over rice and remember to give everyone a spoonful of the sauce too!!

* NB: don’t add the onion and garlic to the pan first as burning can occur and make the mix bitter.
