Chicken Tenderloin Kebabs

As these tenderloins come already prepared on skewers it makes life easy to simply marinate for a couple of hours prior to cooking. Perfect meal for when you are in a hurry or entertaining by the BBQ.

Preparation Time:

10 minutes, 2-3 hours marinating time

Cooking Time:

10 Minutes

Method:

Mix all the ingredients to marinade in a rectangular dish (apart from the lemon). Place the kebabs in the dish and coat chicken with marinade (tip – try to avoid getting marinade over the ends of the skewers if possible as it makes things messy down the line).

Let marinated chicken loin skewers sit in the fridge for about 2-3 hours then take out and rest for 15minutes. When ready to cook heat some oil in your pan or BBQ.

Once the pan or grill is hot, place the skewers as flat as possible on heated surface and rotate until there is a lovely golden even color on all sides of the chicken skewer.

Once cooked, let skewers rest for 10 minutes so they can continue to cook through then arrange skewers on shared platter or how you intend on serving dish with a squeeze of lemon juice over chicken.

We recommend serving your marinated chicken with pita bread and a refreshing Fattoush salad. Yum! D.B.

Ingredients:

2 packets of Digital Butcher 500g Free Range Chicken Loin Skewers

2-3 tablespoons Harissa paste

2 tablespoons Greek yoghurt

1 teaspoon ginger, minced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon sumac

Pinch of salt

1 tablespoon olive oil

1 handful of fresh mint roughly chopped

1 freshly squeezed juice of a lemon to douse all over the finished chicken
